Vibrant Summer Salad

Serves 2


Ingredients

Cucumber sliced - 1 cup

Carrot sliced - 1 cup

Watermelon [ diced ] -½ cup

Mango [diced ] - ½ cup.

Roasted sunflower seeds - 2 Tbsps

Chia seeds - 1 TSP


Dressing

Lemon juice / Vinegar - 1/2 tsp

Oil - 1/2 tsp

Pepper - 1/2 tsp

Honey - 1 Tsp

Chilli powder - 1 Tsp


Method

  1. Make a base of Mint & coriander leaves , followed by cucumber & carrot.

  2. Add the mango and watermelon to the salad followed by the sunflower seeds & chia seeds.

  3. Finally mix all the dressing ingredients together & drizzle over the salad.
