Veg Ravioli - Spinach Cream cheese Ravioli in Green Sauce -Eggless

We all love ravioli and hence I thought of coming up with my own recipe of Ravioli. Here I have prepared an Eggless Spinach ravioli with cream cheese and cottage cheese filling with green sauce.

Best had warm and its a complete meal.

Absolutely super easy to make!


Serves 5-6


Ingredients

For Ravioli dough

Wheat flour / atta - 1 cup

Palak puree [ Spinach Puree] - ½ cup

Oil - 2 tbsps

Water ½ -1 cup [ as per requirement ]

Salt as per taste

*keep some flour additional for kneading


For Filling

Paneer - 1 cup

Cream Cheese - ½ cup

Salt to taste

Chilli powder - 1 Tsp


For Sauce

Garlic cloves - 4-5 cloves

Wheat flour - 2-3 Tbsps

Milk - 1 cup

Palak Puree [ Spinach Puree] - 1 cup

Pasta spice mix powder - 2 Tbsps

Pepper - 1 Tsp

Salt to Taste


Method


  1. In a bowl add The Ravioli dough mixture and knead to a firm dough , rest it aside for ½ hour.

  2. For filling mix all the filling ingredients in the bowl and keep it aside

  3. Now to roll out the dough, divide the mixture into equal balls and roll in thin flat sheets. .

  4. You will require 2 of 8 inch to make roughly 4-5 Raviolis

  5. Spoon the mixture leaving space in between , and cover it up with another flat rolled sheet, and press it down firmly over the sides of the mixture.

  6. In a large pot keep water for boiling add salt and oil , and once the water is boiling drop in the Spinach Ravioli and cook for roughly 4-5 minutes and remove it from water and keep it aside. Also keep the pasta water aside for the sauce as its starch rich and will help in thickening of the sauce.

  7. For Sauce in a pot add butter and ½ tsp of oil [ Oil prevents butter from burning] , once butter is melted add garlic sautee till slightly golden , then add in the onions followed by Milk , wheat flour, pasta mix, pepper powder and keep stirring well so that there is no lump formation. Once the sauce is thick [ on the sppon when you draw a line it stays ] add in the Palak puree and cook for another 5 min. Lastely add salt as required.

  8. In a pasta bowl place the ravioli and spoon over the Sauce, enjoy it warm
