Ingredients
1 cup of Finely chopped Onions
1 cup of Leek Chopped roughly
1 cup of chopped Capsicum
½ cup of peas
½ cup of carrots finely chopped
1 cup of Broccoli
½ cup of mushrooms
1 cup uncooked pasta
1 cup of soaked drained red lentils
1 Tbsp of Onion powder
1 Tbsps of Garlic powder
1 Tsp of Chilli powder
2 Tbsps of Tomato basil paste [ Store bought / home made ]
1-½ cup of coconut milk / normal cream
2 Tbsps of plain flour
Salt as per taste
1 Tbsps of butter
1 Tsp of Oil
Method
Heat a pot, add butter & oil [ oil prevents butter from burning] , followed by leeks and onions. Cook them till translucent.
Then add peas , carrot and broccoli along with lentils and cook further for 5 minutes.
Then add all the spices followed by the coconut milk and mix it well.
Let it simmer for 5-10 minutes , then add the pasta along with tomato puree followed by some water.
Top it up with the capsicum and mushroom, cover it with a lid and let it cook for 10-15 minutes
Remove the lid and then add flour mix it well and cover again and cook for 10 minutes.
Once you see that the pasta is soft take it off heat.
You can add water if you want the pasta with sauce.
Garnish with freshly cut basil or coriander
