Asian Quinoa Salad

Serves 3-4


Ingredients

Quinoa - 1 Cup [ Cooked ]

Sweet Potato - 1 cup [ Finely chopped ]

Broccoli - 1 cup

Carrots - 1 cup [ finely chopped ]

Cabbage - ½ cup [ shredded ]

Capsicum - ½ Cup [ finely chopped ]

Cucumber - ½ cup [ finely chopped ]

Tomatoes - ½ cup [ finely chopped ]

Oil - ½ Tsp


For dressing

Honey - 1 Tsp

Salt - ½ tsp

Soya sauce - 1 tsp

Chilli sauce - 1 Tsp

Ginger garlic paste - ½ tsp


Method

  1. In a pan add oil and once hot add sweet potato . carrots & broccoli. Sautee for 5 minutes

  2. Later add cabbage and capsicum, cook for 5 more minutes and keep aside

  3. In a bowl create a base of the veggies , then quinoa followed by cucumber & tomatoes.

  4. Finally add the dressing and mix the salad well.

  5. Garnish it with micro greens / coriander
